My mission is to bring analytical sensory evaluation techniques to the wine, brewing and olive oil industries.In order to accomplish this, I have developed a series of easy to use, detailed educational guides for aroma and flavor defects found in wine, beer and olive oil. I have also written the chapter "Sensory Quality Control in the Wine Industry"​ in "Sensory Analysis for Food and Beverage Control: A Practical Guide"​ D. Kilcast (ed.) published in 2010 and am co-editor of the book "Olive Oil Sensory Science"​ (Wiley/ Blackwell, 2014).Mary Roach wrote about me in the first chapter of her bestseller "Gulp: Adventures on the Alimentary Canal" (W. W. Norton and Co., 2013).
